Super Food Shiitakes
We love a simple, healthy weeknight meal and this dish really delivers on both fronts. You can pair these quick sautéed Shiitakes with salmon or chicken, or enjoy them on their own with your favorite grains or greens.
These mushrooms are one of our favorites not only for flavor, but for health. They're high in B vitamins, and they serve as a food source of vitamin D. They've also been studied for everything from weight loss, to fighting cancer cells and improving energy levels. We'll raise a fork to that.
Ingredients
1 lb. fresh sliced shiitake mushrooms (here's where to find ours)
3 Tbsp. chicken or vegetable broth
2 cloves garlic, chopped
2 Tbsp. extra virgin olive oil
Salt and pepper to taste
Optional: 2 Tbsp. each of fresh rosemary, oregano, & feta cheese
Steps
Chop garlic and let sit (resting chopped garlic for a few minutes enhances it's health benefits)
Remove any tough stems froms mushrooms and slice.
Heat broth in a cast iron skillet. When broth begins to steam, add mushrooms and cover for 3 minutes.
Remove skillet cover and let mushrooms cook for 4 more minutes.
Toss with olive oil and season with salt and pepper and whatever toppings desired.
